The nectar for this summer blossom honey comes from Sarah Leahy’s Aboyne apiary, in the heart of Royal Deeside. A complex weave of local flowers and trees (wild, uncultivated, diverse) gives this multifloral honey its character. Each jar represents the quiet labour of well over a million blossoms. The result is layered, rounded, and deeply expressive of place. Some will simply call it “summer in a spoon.” Others may attempt a full tasting note. Both approaches are entirely acceptable.

A rich orange-amber with a soft set consistency. Unusually saturated and luminous — one of the most striking honey colours we have seen. Excellent with natural yogurt and fresh fruit.

Aboyne is a charming village on the edge of the Scottish Highlands with the River Dee,which rises in the Cairngorms and flows to the North Sea in Aberdeen running beside it. Its picturesque location is some 50 km west of Aberdeen. Due to its high inland position, temperatures can reach exceptional values for the latitude, particularly during the winter months due to the foehn effect; it holds the January record for the highest temperatures in the whole UK (18.3 °C).

A wide variety of local wildflowers (dandelion, clover, thistles, brambles, lime trees, rosebay willow herb, etc) and sometimes with an influence of early heather.

In Royal Deeside the summer blossom is usually harvested in early to mid-August - the warmest month of the year in Scotland (although you can still expect mild and rainy weather). By that time, Sarah Leahy’s bees have mostly capped their stores with wax and are fully prepared for the 6-weeks heather season.
